Pink Oyster 'Bacon'

Ingredients

8oz fresh Pink Oyster mushrooms

Avocado oil (or any oil with high smoke point)

Smoked Paprika

Salt & Pepper to taste  

Method

1. Slice Pink Oysters into strips of desired width

2. Place frying pan on medium heat and fill with 1/4 inch of avocado oil

3. Once oil is shimmering, place strips into oil, gill side down 

4. Flip strips once the edges have crisped, about 5 minutes 

5. Continue to fry for another 5 minutes, or until strips are crispy through and through

6. Remove from pan and season generously with smoked paprika and salt and pepper to taste
